Marinara Sauce - This sauce is very versatile. It can be prepared with vegetables, fish, meat, of course pasta or rice. One of my favorite is grilled chicken w/peppers and onions. Sauté mussels or clams w/ touch of butter, white wine & top with marinara sauce. It’s a great compliment with any of these baked fish: Cod, swordfish, snapper on tuna. Make your own seafood primavera, heat some marinara and toss in shrimp and scallops with some steamed vegetables of your choice.
*Lastly but not least, it’s always a great meal with Cucina Antica spaghetti/Penne or a pasta of your choice topped with grated pecorino romano cheese.

La Vodka Sauce - Simply great with any fish, especially baked salmon and peas, also great with shrimp and julienne vegetables (carrots, celery, zucchini, etc.). Another great dish is seared scallops with steamed asparagus.

If you want to do pasta: Create your own restaurant dish: cook some of Cucina Antica’s Imported Penne Pasta toss with a little Cucina Antica’s Extra Virgin Olive Oil, add some arugula, pecorino cheese and top it with La Vodka sauce. Equally great with any pasta of your choice; A must try with filet mignon or even sauteed chicken and broccoli!!! P.S. Try it with lobster Ravioli.

Spicy Arrabbiata - The Spicy Arrabbiata is excellent when simmered w/shrimp, touch butter & white wine. A common favorite is Seafood Fra Diavolo, which is made simply simmering a combination of shellfish (clams, mussels, calamari, shrimp, and scallops) with the Spicy Arrabbiata sauce.
Another good dish sautéed fresh Italian sausage or chicken w/mushrooms, peppers & onions and add the Spicy Arrabbiata.
*If you like carbs add spag, ziti or your favorite pasta to any of the above dishes.

Puttanesca –
This sauce makes for an excellent topping for just about any fish of chicken; some suggestions: Baked Salmon, Seabass, Cod, Snapper or Tuna. My favorite is Grilled Swordfish. An outstanding dish is: Grilled Swordfish tp w/ Puttanesca & wilted Arugula.
*Of course if Ling or Perciatelli pasta is allowed; it’ll make you lick your fingers.

Fresh Roasted Pepper Marinara - Made with our very own freshly roasted Red Peppers with a touch of fresh garlic and herbs. This sauce is not only fantastic with many pasta dishes, but also great over grilled chicken, fish or rice. This sauce is delicious w/ Salmon or Snapper. Also, create your own chicken or steak pizzaiolo by simply topping it with this flavorful sauce. Another favorite is warmed Roasted Pepper Marinara over baked Chilean sea bass.
*If you’re in the mood for carbs try it w/Ravioli or Penne.

Fresh Arugula Marinara - Made with Fresh Baby Arugula with a light blend of herbs, garlic and spices. This sauce has a natural fresh herbaceous taste. It's great for the arugula lover. A popular dish at is this Arugula Marinara tossed w/ Grill ck & top w/ goat cheese; Equally great when used as a topping w/ grilled Tuna, Swordfish, Snapper or Cod.
*If you choose to do it w/pasta or Rotini spiral pasta cooked with crumbled sausage & goat cheese; you’ll lick the dish!

Tomato Basil - This sauce can be used to make your favorite “Alla Parmagiana dish!” My favorite is grilled eggplant or chicken sprinkled with pecorino cheese & topped w/Tomato basil sauce & mozzarella, just bake it for a few minutes. If you’re making a meat or vegetable stew add some tomato for an incredible flavor. *Make your own Bolognese sauce (meat sauce). Simply sauté some ground beef until it’s cooked. Drain the oil, add ½ tbsp of unsalted butter, some pecorino Romano cheese and the tomato basil sauce, simmer and serve it with your favorite pasta. Great with Spaghetti & Meatballs.
